Carrot and Cauliflower Relish

175 g Cauliflower florets; (6oz)
3 Carrots; sliced
1 ts Vegetable oil
1/2 ts Ground turmeric
1 ts Chilli powder
1 ts Sugar
4 tb Tarragon vinegar
1 ts Mustard seeds

689 Blanch the cauliflower and carrots in boiling water for 1 minute. Refresh in cold water.

Combine all the remaining ingredients and leave to stand for about 1 hour, allowing the cauliflower and carrots to absorb the various flavours.

Serve cooled, but not chilled, as this would kill the flavour.
