Crispy Half-baked Spuds

2 md Potatoes -- (about 2/3 pound)
2 ts Butter -- or margarine, melted
1 ts Lemon juice
2 tb Grated Parmesan cheese
Pepper, to taste

Cut potatoes in half lengthwise; brush cut surfaces with mixture of butter and lemon juice. Combine cheese and pepper; dip cut side of potato halves into mixture to generously coat. Place cut sides down on well-greased baking sheet. Bake in 375-degree oven 25 to 30 minutes, or until potatoes are tender. Variations: 1. Add dried or chopped fresh herb of your choice to cheese mixture before coating potato. 2.Omit butter and lemon juice. Dip cut side of potato halves in prepared pizza sauce, then in Parmesan cheese before baking.
