Baby Maine Au Gratin Potatoes

12 Baby Maine Potatoes (Peeled Or Unpeeled)
1/2 lb Bacon -- Diced
1 md Onion -- Diced
1 md Green Pepper -- Diced
1 lb Velveeta Cheese -- Quartered
4 tb Clarified Butter
1/2 c Seasoned Bread Crumbs -- For Topping

Method: Simmer potatoes in salted water until 75% done. Cool and pat dry. Saute potatoes in butter until golden brown. Place in casserole dish. Saute bacon until 75% done. Add onion and peppers. Saute 2 minutes. Pour mixture over potatoes. Add cheese. Top with crumbs. Bake at 350 degrees F until cheese melts and bubbles. Serves 4.

NOTE: Preheating saute pans, in most cases, can make foods stick to them.
