Paprikas Burgonya (Paprika Potatoes with Sausage) 4 tb Vegetable oil
1 Clove garlic, minced
2 sm Onions, chopped
1 Green pepper, cored, seeded, and finely chopped
10 md Potatoes, peeled and diced
2 ts Hot Hungarian paprika
2 Tomatoes, peeled, seeded and diced
1 ts Salt
Pepper to taste
1 lb Firm Hungarian sausage, cut into 1/4 inch slices (substitute Kielbasa)
Heat the oil in a saucepan and saute the garlic, onion and green
pepper for 3 minutes. Add the potatoes, and saute for five minutes.
Dust with the paprika and stir to coat potatoes. Add the tomatoes,
salt and pepper and enough water to cover the ingredients. Cover the
saucepan and cook for 15 minutes or until the potatoes are almost
tender. Add the sausages and cook for five minutes. Drain and serve
