A Potato Salad

4 med. red potatoes
2 boiled eggs
1 heaping tbsp. pickle relish
1 sm. onion, finely chopped (optional)
1/2 apple, chopped into 1/2 inch cubes
1/2 tsp. mustard
2 heaping tbsp. of mayonnaise

Peel potatoes, wash thoroughly. Cut into 1/2 inch cubes. In pan, cover the potatoes with salted water. Bring to boil and cook over medium heat for 20 minutes or until potatoes are tender but firm. Do not let them boil dry. Drain and cool for 10 minutes. To the potatoes add the rest of ingredients. Mix well and serve warm or chilled. Four servings.
