Alu Bhaji (Savoury Fried Potatoes)

500 gram potatoes
2 medium onions
1 tablespoon ghee
1/4 teaspoon black mustard seeds
1/2 teaspoon ground turmeric
1/2 teaspoon chili powder
1 Tsp Salt

Boil the potatoes, peel and dice. Chop onions finely.

Heat ghee in a saucepan and fry the mustard seeds until they pop. Add the onions and continue frying on low heat until they are soft and golden brown.

Add turmeric and chili powder and stir, then add potatoes, sprinkle salt over and toss gently to mix well together.

Serve hot or cold.
