Baked Sweet Potatoes with Amaretto

5 lbs sweet potatoes
1/2 cups butter
1/2 cups brown sugar -- packed
1/4 cups amaretto
1/4 cups orange marmalade
1/2 tsp salt
20 gingersnap cookies -- crushed

Preheat oven to 450F. Lightly grease sweet potatoes and bake until soft, about 40 minutes. Let cool, then peel and mash well with butter, brown sugar, amaretto, marmalade and salt.

Grease a shallow 3-quart baking dish, spread potatoes evenly in dish, then crumble the cookies over them. Bake at 350 for 35-45 minutes.
