Kale and Seasoned Hash Browns

1 tablespoon olive oil OR non-stick vegetable spray
2 pounds frozen hash brown potatoes
1/2 cup onion -- chopped
1/2 teaspoon all season salt
2 cups fresh kale -- chopped
1/4 cup water

Heat oil over medium-high heat (375 degrees F) in large fry pan.

Add onion and saute until onion is translucent.

Add frozen hash browns, cover and cook 15 to 20 minutes, turning every 2 minutes.

Sprinkle potatoes with all season salt.

Add 1/4 cup water and chopped kale on top of potatoes do not stir.

Cover and let cook over medium heat 3 to 5 minutes, until kale begins to wilt.

Remove from heat and stir kale into potatoes.

Serve hot.
