Potato Salad For A Crowd

Serves 300
90 lb Potatoes, cooked, cooled and diced
36 ea Hard boiled eggs, diced
12 ea Celery stalks, diced
4 bn Green onions, chopped
6 bn Radishes, chopped
6 qt Mayonnaise or Miracle Whip (MW gives nicer flavour) 13 1/2 cn Evaporated milk (gives nicer flavour than light cream)
3 c Sugar
2 c Vinegar
15-18 tsp dry mustard

Mix together the potatoes, eggs, celery, onions and radishes. Tossing to mix well. Combine the remaining ingredients and pour over potato mixture. Mix very well and allow to chill for at least 4 hours, serving a few times during that time.
