Reuben Baked Potatoes

4 lg Baking potatoes; (abt 2 lbs)
Cooking oil
1 cn Spam luncheon meat - (7 oz) diced
1/2 c Sauerkraut; rinsed, drained
1/2 c Shredded Swiss cheese

Wash potatoes well; rub with cooking oil. Bake in 425 degree oven 45 minutes or until tender. Remove from oven; cut a cross in top and push ends together to open.

Toss Spam with sauerkraut. Mound Spam mixture on top of potatoes; sprinkle with cheese. Return to oven for 5 to 7 minutes until Spam is hot and cheese melts.

Microwave directions: Scrub potatoes; prick with fork. Microwave 10 to 12 minutes until tender. Cut a cross in top and push ends together to open.

Toss together Spam, sauerkraut, and cheese; mound mixture on top of potatoes. Microwave 5 minutes.
